The secret to the French Paradox

For years, scientists have studied the phenomenon known as the "French Paradox." The French have a diet filled with saturated fat and cholesterol, yet they have the lowest rate of heart disease of any western society-nearly half that of the U.S. Why?

Some scientists believe the answer lies in the red wine the French drink-specifically, the polyphenolic bioflavonoids concentrated inside the grape seeds, which end up in the wine. In fact, that's why some experts believe that red wine is more healthful than white, since red wine is fermented with the seeds while white wine is not.
